About the Book
In her book Open to the Public, Linda Putney has given us a directory of over 200 worldwide training restaurants and hotels which are open to the public. Her listings include the names and addresses, telephone, fax number, days and hours of operation, type of cuisine, web sites, and other descriptive information supplied by the establishments. In addition, Ms. Putney has included some sample menus.
In her research, the author found that most of these restaurants and hotels are booked early, and reservations are therefore usually needed. This information is also supplied in each listing.
Although there are many fewer training hotels, Ms. Putney has unearthed them and included them in her book.
This book is written for the value-seeker and traveler who enjoys eating out at a good price.
About the Author
In 1994, Linda Putney and her husband stumbled upon a training restaurant and hotel in Nimes, France. To their delight they had an exquisite meal at a very reasonable price. Thus began Linda's search for other such establishments. A sleuth by nature, and a teacher for 26 years, her recent retirement has provided more time to do the research.
Growing up eating good food in an Italian family, Linda now enjoys traveling, cooking, dining out and finding a good value. She and her husband and their two cats live in Bennington, Vermont.

Introduction
Several years ago, while traveling in France, my husband and I stumbled upon a training restaurant of a culinary arts school where we had a superb dining experience at a very reasonable cost. Since that time, in our travels, I have looked for other training restaurants and hotels which are open to the public and are operated by hotel and restaurant schools. They have not been easy to find. So I have undertaken the task of gathering the names, addresses, and other information about each, with the purpose of publishing a directory for travelers. Although there are far fewer training hotels, I have noted these using the symbol of a bed.
In this directory I provide the reader with not only the location, but other information which will help him/her learn more about a restaurant and/or hotel and make reservations, if necessary. I have not critiqued any of the training restaurants or hotels. The information I have included has come from the schools themselves or from their websites. If I have left any out, I would appreciate hearing from my readers, so that I can include them in my next edition. Please write to Linda Putney, 834 Dermody Rd., Bennington, Vermont, USA 05201.
It is my hope that you will use this book in your travels and take advantage of many of these fine training hotels and restaurants which offer wonderful dining and accommodations at very reasonable prices.
