About the Author The author has collected recipes over the past 30 years from family and friends. And she is from a southern family that has always enjoyed home cooked meals. These recipes are some of the favorites of her family and friends through the years. Ms. Snow has a sales background, which includes selling appliances, and was one of the most exciting and informative jobs ever. Going to food shows and cooking demonstrations was a lot of fun. Her Florida real estate license is presently inactive. For the past two and one-half years, she has been devoted to taking care of her 86 year old mom, Annie, in Orlando.

Chocolate Peanut-Butter Bars

• 1 package yellow cake mix
• 1 C. peanut butter
• 1/2 C. butter or margarine (1 stick)
• 1/4 C. all-purpose flour

Preheat oven 350 degrees. Mix all ingredients, as you would pie crust. Press half the mixture in a 9 x 13 inch pan. Spread filling on this. Crumble rest of cake mixture on top. Bake for 25 minutes. Let cool, then cut in bars.

Filling Mixture

• 1 container Coconut-Pecan Frosting
• 1 - 6 oz semi-sweet chocolate chips

In heavy small saucepan, combine frosting and chips. Heat on low, stirring until the chips are melted. Remove from heat and cool. Make filling first.

Note: For anyone that can remember back about 30 years, Betty Crocker used to have a Coconut-Pecan Frosting Mix in a dry package that you had to cook. The dry mix was so good, and better for this recipe, but they just stopped selling it.

 

Peach Cobbler

• 1 C butter (2 sticks)
• 3/4 C. flour
• C. milk
• 2 C. sliced peaches (if canned, drain)
• 1&1/2 C. sugar
• 2 t. baking powder

Preheat oven to 350 degrees. In medium bowl, mix peaches with 1 cup of the sugar. Melt butter in a 9 x 7 pan. In another bowl, blend remaining sugar, flour, baking powder, salt and milk; pour over the melted butter. Do not stir. Put peaches on top. Bake for 45 - 50 minutes or until crust is golden brown.
