This book is an illustrated poem about a jungle elephant who just couldn't get enough peppermint to satisfy himself. He continually ate and daydreamed about it. No matter where he was or what he was doing, he could not get his mind off of peppermint.
The pictures are very vibrant and beautifully illustrated. The poem is funny and will appeal to young children and they will love the unusual ending.

Joan F. Springer is married and has four children and one granddaughter. She lives in Delaware with her husband and has been writing children's poetry for over 30 years. The Peppermint Elephant is one of her favorite poems. Joan does glass painting and works with oils and acrylics on canvas. She also writes inspirational songs and sings with her local Church choir.
