Written by a nutrition, food science & dietetic graduate who has always been interested in trying to get health and nutrition knowledge across to many people all over the world.


About the Author

Sandra Tay has been a computer programmer for 26 years. She graduated from the University of Nottingham in England with Honours in Nutrition and Food Science. She also has a postgraduate Diploma in Dietetics at the Polytechnic of North London in England. This is her first nutrition and health book.

Fruits and vegetables provide essential vitamins and minerals, fibre, carbohydrates, protein and water which are needed by our body. They are also packed with hundreds of disease-fighting phytochemicals which are natural plant chemicals that work as a team to protect good health.

A diet rich in fruits and vegetables and low in fat, is associated with reduced risk for heart disease, high blood pressure, stroke, cancer and diabetes.

According to the American Cancer Society, ellagic acid prevents the binding of carcinogens to DNA and strengthens connective tissue, which may keep cancer cells from spreading.

Research indicates that because of its antioxidant properties, lutein consumption may play a role in maintaining the health of the eyes, heart and skin as well as the breasts and cervix in women.

According to researchers from the University of Kansas, US, green tea is 100 times more effective than vitamin C and 25 times better than vitamin E at protecting cells from damage linked to cancer, heart disease and other illnesses.

Whole nuts 'burn slowly', and help equilibrate appetite, damping down 'calorie cravings'. In a natural diet, using nuts as an important part of the food mix, and coupled with exercise, it is possible to lose, not gain, weight.
