Everything Pepper Soup Ingredients:  ¼ cup canola oil  2 medium onions, quartered  1 lb. oxtail, cut into bite-sized chunks  ½ lb. tripe, bite size chunks  ½ lb. cow foot, bite size chunks  ½ lb. kidneys, bite size chunks  ½ lb. beef ribs, bite size chunks  3 hot chili peppers, ground  4 oz pepper soup seasoning  2 oz crayfish, ground  1 beef bouillon cube  salt (to taste)  black pepper (to taste)  2 oz utazi leaves  2 oz mint leaves  4 cups water Cooking Instructions:  Rinse kidney in cold water and marinade in salty water for 45 minutes  Strain the kidney and cook for 5 minutes on medium high  Rinse kidney and set aside  Add oil to a large saucepan or dutch oven  Add the onions and stir fry for 3 minutes on medium high  Add oxtail, tripe, ribs, cow foot, salt, bouillon, chili, water and bring to a boil for 40-45 minutes or until tender  Reduce heat to medium and add kidney  Add the pepper soup seasoning and let it simmer for 15-20 minutes  Add black pepper, crayfish, mint and utazi leaves, stir and let it simmer for 10 minutes on medium low  Serve hot in a soup bowl Servings: 10 Per serving: 326 calories, 150 fat calories, 16.6g total fat, 4.7g saturated fat, 162mg cholesterol, 377mg sodium, 11.7g carbohydrate, 3.1g dietary fiber, 32.6g protein Jerk Chicken Jamaican Jerk Seasoning is a spicy, tangy seasoning. Its unique flavor is fast becoming popular with American consumers in all walks of life. There are many variations in the US market but the authentic is the paste that can be rubbed on chicken Ingredients:  12 pieces chicken drum sticks/wings  4 tablespoon Jerk seasoning powder  1 teaspoon season all or allspice  1 cup diced onion  1 cup diced scallions  1 teaspoon thyme  1 teaspoon parsley  2 hot bonnet pepper (seeded and chopped)  1 teaspoon salt  1 teaspoon cracked black pepper  2 tablespoon Worcestershire sauce  1 cup olive oil  2 tablespoon warm water Cooking Instructions:  Puree all ingredients except chicken in a blender and chill in the refrigerator overnight  Rinse the chicken parts in water and pat dry  Put chicken in a ziploc bag and pour chilled spices on it, swirl to coat chicken  Refrigerate overnight to allow the chicken to absorb the full flavor  Preheat the oven to 375F  Arrange in a greased baking pan (I use olive oil spray). Cover with foil and make 2 slits in the foil  Bake for 30 mins, then remove the foil and drain the juices into a dip bowl  Set the oven to broil and broil chicken for 10-15 minutes or until medium brown  Serve chicken as an appetizer or as a side with steamed rice Servings: 6 Per serving: 449 calories, 180 fat calories, 20.2g total fat, 4.1g saturated fat, 229mg cholesterol, 886mg sodium, 4g carbohydrate, 2.3g dietary fiber, 63.2g protein
